This is a course for students who have a keen interest in food, health and well-being. The course provides a balance between theoretical understandings and practical experiences.  It uses a practical approach that allows students to solve problems of everyday life.

Unit descriptions

Food Communities

During this unit students will look at the development of, and influences on Australian cuisine, from the use of bush foods to international cuisines. Students will prepare a range of foods from different cultures.

Contemporary Food

In this unit students develop an appreciation of emerging and contemporary food products available in society and learn to make informed and ethical consumer choices.  Innovations and contemporary trends such as advertising, sustainable food production, the desire for novelty, food styling and the impact of social media are explored and their impact is examined through the preparation and presentation of food items.

Food and Health

Students study nutrition and related menu planning to meet a range of dietary and cultural needs and become aware of the relationship between food and health. Practical experiences will be used to emphasise the theoretical components.

Food Choices

This unit investigates the range of factors that influences our food choice and considers the challenges people face in accessing healthy food. Students develop knowledge and understanding of the characteristics of types of food and the processing of food.
